I have an issue, mostly occurring when I have a violent sneeze, where my neck will pop, and I immediately experience a pretty powerful electric shock through my entire body which takes me a few minutes to shake off. Any idea what might be causing this? Thanks so much for any help you can offer!

Sorry to hear of your pain upon sneezing.
"Electric shock throughout the body" - certainly deserves investigation.
Visit your local neurologist or family Doctor of Chiropractic.
When we sneeze, we increase intrathecal pressure. Pressure within our spinal canal (the space that holds the spinal cord and the spinal nerve roots) suddenly dramatically spikes, and this can irritate our spinal cord or spinal nerves IF there is reduced space in your spinal canal.
There may be reduced space in your spinal canal from spinal stenosis ( a narrowing of the space ), herniated disc, vertebral subluxation complex, some space taking lesion, or intrinsically irritable nervous system (some metabolic or pathological process). These things REQUIRE an evaluative workup. If you go to your family MD, unless he(she) is a neurologist, he will refer you to a neurologist. Your local Doctor of Chiropractic deals with spinal problems all day, and may be comfortable evaluating you inside his(her) own office.
Evaluation includes: case history consultation (looking for pathology, trauma, family hx), physical examination, Xray, Probably MRI or CT scan of spine/ and possibly head.
Your problem probably comes from the mechanics of your neck. That is why I recommend a Doctor of Chiropractic, Xrays and an MRI.
EMG/ncv is another test that you may be asked to go under.
I have listed health concerns that could be causing this. Your symptoms NEED evaluation. And yet, with all I mentioned,,, somehow this may be normal for you,,,, you may not have any specific problems,,, but I would certainly want to rule out the problems before I accepted this as 'normal for me'.

Disk Herniation
Herniated disk is actually a quite common condition. However, the course of the condition is highly variable. Some patients with a herniated disk literally cannot walk, yet other patients with similar MRI findings may be able to run marathons or lift heavy weights. Some people suffer for only a few days with pain and symptoms, some people suffer for months. Although the course is highly variable, there are certain steps that are always helpful to follow: Ice the area when painful- 10/ 15minutes on, 30/ 45 minutes off; avoid certain postures and movements; bend the knees when coughing or sneezing; bend the knees when lifting anything; do not extend legs straight out when sitting, laying down, lifting, or driving. Avoiding certain movements and postures will prevent aggravation of the condition. Practicing good postures and movement patterns will help the condition heal and be less painful.
Disk Herniation is often caused by, or often concurrent with the Vertebral Subluxation Complex.
